Katayef With Rainbow Cream

Ingredients:

  • 3 cups flour
  • 3 cups water
  • 1 tsp baking powder
  • 1 tbsp sugar
  • ½ tsp bicarbonate of soda
  • 440 g of Rainbow Cream

Preparation:

  • Mix all ingredients except the cream and set aside for 2 hours until dough rises
  • Heat a non-stick pan over medium heat until very hot
  • Pour 2 tbsp of katayef dough onto the pan forming a disc shape and leave to heat up until bubbles start forming. The katayef is done when the top part gets dry and the bottom part is brown. Set katayef aside and repeat process with the remaining dough.
  • Place 1 tbsp of cream into each katayef disc and close edges tightly
  • Garnish with pistachio and serve with sugar syrup

Sugar Syrup

Ingredients:

  • 1 cup of sugar
  • ½ cup water
  • 7 tsp lemon juice
  • 1 tsp rose water

Preparation:

  • Boil the water, sugar and lemon juice, then add the rose water and leave for 5 minutes
