Basbousa with Rainbow Cream

Ingredients:

  • 1 cup of fine or coarse semolina
  • ½ cup sugar
  • 2 tsp baking powder
  • ¼ tsp bicarbonate of soda
  • 1/4 tsp salt
  • 3 eggs
  • 1 tsp vanilla
  • 1 cup yogurt
  • ¾ cup oil
  • 170 g of Rainbow Cream

Preparation:

  • Mix all ingredients together except the cream
  • Place 2/3 of the mixture in a baking dish after rubbing with oil
  • Bake in oven for 10 minutes
  • Spread the Rainbow Cream on top and cover with a second layer of the mixture. Bake again in the oven for ½ hour
  • Decorate with pistachios
